Ama’s introduces a new product into the United States.

Casabe is a gluten free flatbread. It is made with the Yucca root, which is grown in the Dominican Republic. Under the brand name Casabi, we are excited to finally be able to distribute it nationwide. It is rare to find all of these attributes in a manufactured gluten free product: one ingredient, complements everything, priced affordably, hand made by an Artisan community worth supporting and best of all, IT REALLY DOES TASTE GREAT.

Its production and consumption go back to prehispanic times, and it is made of yucca, or manioc, also known as bitter yucca (Manihot esculenta).

Due to its properties of preservation,  yucca was one of the fundamental sources of nourishment for the native population in northern South America, it was part of the traditional Taino diet, the native inhabitants of the Caribbean.

Easy to
prepare!

Preheat oven to 350 degrees, place flatbread on baking sheet, drizzle with oil and lightly salt. Bake 10-15 minutes until light golden brown.

Experiment by adding spices and herbs, like rosemary, thyme, or basil. Also try it with Jam, hummus, black beans and eggs, etc… The possibilities are limitless!

Hello, my name is Nancy Luby Arriaza and I am the “Ama” behind this company. My family and I lived in the Dominican Republic from 1986 through 1991 and I have continued to go several times a year to visit my family. My son-in-law introduced me to this product over twelve years ago, and I loved it from the start. I would always bring several packages home with me, and use it sparingly to make it last.

Recently I was able to form a partnership with a company in the Dominican Republic which is dedicated to providing an excellent product , while at the same time helping support this artisan work in one of the poorer areas of this country, in the town of Moncion. This product is labor intensive to produce and the workers take great pride in the work that they do. This company takes care of their employees , from providing higher than average wages, to supplying school supplies for their children and also providing optometrist for these families.

I am very proud to offer this product to the public here in the United States of America. This product is a staple in every home in the Dominican Republic, and now we have the opportunity to share it with you. This product is especially good for anyone who suffers from gluten intolerance or celiac disease.

Our product, known as Casabi, is easy to prepare. Each package has four pieces and I just place them on a cookie sheet, drizzle with olive oil and salt lightly. Then I place them in the oven at 350 degrees for ten to fifteen minutes until lightly toasted, a golden brown. The most exciting thing about this product, for me, is that it has so many ways to serve. Season as you choose with, rosemary, thyme, cinnamon ,whatever occurs to you.

The package itself has a shelf life of one year. Just place it in your pantry. Once it is toasted, it will last for a week placed in a ziplock bag or an airtight container. In my family, we serve it with scrambled eggs and refried beans, or raspberry jam, or cheese or even just plain. We also love to make Casabi pizza, topping the toasted bread with arugula, tomatoes and cheese and heating until cheese melts. So yummy! Use your imagination!
