Yucca, also known as cassava or Casabi, is a root vegetable. Yucca contains fiber, antioxidants and saponin. Yucca extracts are often sold in health stores.
The beneficial factors of this superfood are reduction of inflammation, ability to lower blood pressure, and it is known to improve skin conditions. Yucca is often prepared like potatoes but is now available as a flatbread or a cracker. These flatbreads, called Casabi, have been imported to the United States from the Dominican Republic.
Another root vegetable that is more common than you think is Yams.
Unlike Yucca, Yams are a superfood that is easy to find on most parts of the USA, usually next to sweet potatoes. Most recipes that call for sweet potatoes, you can swap out one of the potatoes for a yam. This also works with recipes for things like mashed potatoes or celeriac.
Yams can be prepared in a variety of ways, sometimes in combination with other vegetables. Yams are full of vitamin B, vitamin C, and potassium rendering them good for energy, metabolism, and lowering of heart rate along with blood pressure.
Plantains are a direct cousin of the banana. They are a starchy, low in sugar variety that is cooked before serving. It is used in many savory dishes and is very popular in Western Africa and many Caribbean countries.
Plantains are high in vitamin A. Vitamin A can help maintain muscle membrane. It can also enhance skin elasticity and keep your skin healthy.
You will want to bake or fry your plantains, or use them in place of potato starches, like in plantain pancakes or waffle, even plantain tortillas.
Lentil, also known as Pigeon Pea, has the second highest ratio of protein per calorie of any legume after soybeans. Not only are they easy to prepare, but Lentils are considered one of the world’s healthiest foods. Lentils can help in lowering cholesterol fiber and aid with managing blood sugar disorders.
Lentils are also a great source of vitamin B.
The easiest way to cook Lentils is to boil on a stove-top, using 3 cups of water or vegetable stock to 1 cup of dry lentils. Use a large pot because the lentils will triple in size. Bring it all to a boil, cover, reduce heat and simmer until they are tender. It takes about 15-20 minute for whole lentils.
Garlic, Broccoli, Salmon, Leeks, Cauliflower and Watermelon are all examples of other superfoods. High in vitamins and nutrients for your body, these superfoods are great for your body and tasty too!
You can also try combining some of these for great meals. Baking some Casabi flatbread or crackers with a little olive oil and garlic can get you 3 superfoods in one healthy, gluten free snack.
