Salmon Cakes with Casabi cracker crumbs

  • 1 cup salmon
  • 3 eggs 
  • 1/2 cup Garlic Casabi crackers, crushed. Add more if needed
  • 1/3 cup minced red peppers
  • 1/3 cup minced onion
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder 

Form into cake like patties. 

Heat skillet to medium. Add olive oil to coat the pan 1/4 in. Cook to a crisp and turn to cook other side.

Great with aioli sauce or cocktail sauce.
